How GRIB and JPG differ in practice

GRIB is a container for scientific arrays, not a picture. One file usually holds several variables, such as temperature, pressure or wind, often across a series of time steps and a stack of vertical levels, each stored as floating-point values in its own units. JPG holds one flat image, so the conversion has to reduce all of that to a single slice and map its values onto shades. Treat the result as a snapshot for a report or a slide: the data itself stays in the GRIB. GRIB carries georeferencing: a coordinate reference system, and the real-world position and ground size of every pixel. JPG has nowhere to record any of that. The picture transfers intact, the location does not, so the output cannot be dropped onto a map afterwards without being placed by hand. Keep the GRIB original if the data still has to go back into a GIS.
